A premium Italian flour, Eurostar “OO” Rinforzato has been especially developed for all types of bread.
With a protein level of 12% and high extensibility, it is very versatile and gives reliably excellent volume. Also ideal for use in high-end pizza, suitable for the sourdough/Italian ‘BIGA’ method as well as direct mixing methods with 10-12 hours fermentation. W value 300.
