Fluffy Gluten Free Pancakes

Ingredients:

  • 300g Eurostar Premium Gluten Free Self Raising Flour
  • 2 heaped teaspoons of gluten free baking powder
  • 300ml of lactose free semi skimmed milk 
  • 1 table spoon of sugar
  • 1 teaspoon of vanilla extract 
  • 2 eggs

Method:

  1. In a bowl, mix together all the ingredients
  2. Whisk away until you have a bubbly mixture 
  3. Leave to stand for 5 minutes
  4. Put your pan on a medium heat and add a small dollop of butter (I used a plant based butter) 
  5. Take a small ladle full of the mixture and add to the pan 
  6. Allow your pancakes a minute or so to bubble and cook and then flip over and repeat
  7. Once you are happy the pancakes are cooked remove from the heat
  8. Add your favourite toppings and enjoy!
