Fluffy Gluten Free Pancakes

Ingredients:
- 300g Eurostar Premium Gluten Free Self Raising Flour
- 2 heaped teaspoons of gluten free baking powder
- 300ml of lactose free semi skimmed milk
- 1 table spoon of sugar
- 1 teaspoon of vanilla extract
- 2 eggs
Method:
- In a bowl, mix together all the ingredients
- Whisk away until you have a bubbly mixture
- Leave to stand for 5 minutes
- Put your pan on a medium heat and add a small dollop of butter (I used a plant based butter)
- Take a small ladle full of the mixture and add to the pan
- Allow your pancakes a minute or so to bubble and cook and then flip over and repeat
- Once you are happy the pancakes are cooked remove from the heat
- Add your favourite toppings and enjoy!
