Fluffy Gluten Free Choc Chip Cookies
Ingredients
- 300g Eurostar Premium Gluten Free Plain Flour
- 100g caster sugar
- 100g light brown sugar
- 120g butter, melted
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 100 g chocolate chips
- In a bowl, mix together light brown sugar and caster sugar with melted butter. Mix until it all comes together and is fully combined
- Add egg and vanilla extract and mix
- In a separate bowl, add Eurostar Commodities Gluten Free Plain Flour, bicarbonate of soda, and salt and briefly mix
- Combine wet and dry ingredients and mix to combine.
- Add the chocolate chips and give them a good mix in so they are dispersed evenly
- Cover the mixture and chill in the fridge for 45 minutes
- Heat your oven to 170C and prepare a couple of baking trays with non-stick baking paper.
- Remove your cookie dough from the fridge and form small balls using your hands. Space out the dough balls on the lined baking tray
- This recipe makes approximately 14 delicious cookies
- Cook for 15 minutes until golden
- When you remove from the oven leave to firm up for 5 minutes
