Fluffy Gluten Free Choc Chip Cookies

Ingredients

  • 300g Eurostar Premium Gluten Free Plain Flour
  • 100g caster sugar
  • 100g light brown sugar
  • 120g butter, melted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 100 g chocolate chips
  1. In a bowl, mix together light brown sugar and caster sugar with melted butter. Mix until it all comes together and is fully combined
  2. Add egg and vanilla extract and mix
  3. In a separate bowl, add Eurostar Commodities Gluten Free Plain Flour, bicarbonate of soda, and salt and briefly mix
  4. Combine wet and dry ingredients and mix to combine.
  5. Add the chocolate chips and give them a good mix in so they are dispersed evenly
  6. Cover the mixture and chill in the fridge for 45 minutes
  7. Heat your oven to 170C and prepare a couple of baking trays with non-stick baking paper.
  8. Remove your cookie dough from the fridge and form small balls using your hands. Space out the dough balls on the lined baking tray
  9. This recipe makes approximately 14 delicious cookies
  10. Cook for 15 minutes until golden
  11. When you remove from the oven leave to firm up for 5 minutes
